Jalapeno Pork

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 Tbsp olive oil
4 boneless pork chops, about 1-inch thick
1 small onion, chopped
1 small red bell pepper, chopped
2 medium jalapeno peppers, stemmed, seeded, and chopped
1 clove garlic, finely chopped
1 tsp ground cumin
1 1/2 cups water
1 package Knorr Roasted Pork gravy mix
1 to 2 Tbsp lime juice
1 Tbsp finely chopped fresh cilantro (optional)

Instructions:

Heat olive oil in a large nonstick skillet over medium-high heat and cook pork until done, about 6 minutes. Remove pork and keep warm.

Add onion, red pepper and jalapeno peppers and cook, stirring occasionally, until vegetables are tender, about 3 minutes. Add garlic and cumin and cook 30 seconds. Stir in water and KnorrĀ® Roasted Pork gravy mix and bring to a boil, stirring frequently. Stir in lime juice. Reduce heat and simmer 2 minutes.

Arrange vegetable mixture on a large serving platter. Top with pork, then sprinkle with cilantro. Serve with hot cooked rice and lime wedges. Enjoy your delicious creation!
