Jalapeno Poppers with Bacon

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 (8 oz) package cream cheese, softened
1 cup shredded sharp Cheddar cheese
3 Tbsps bacon bits
12 fresh jalapeƱo peppers, split in half lengthwise, stems, seeds removed
1/2 cup all-purpose flour
4 eggs, lightly beaten
1 cup bread crumbs
Vegetable oil for frying

Instructions:

Makes 2 dozen poppers

In a medium bowl, combine cream cheese, cheddar cheese, and bacon bits. Firmly press a heaping spoonful of the cheese mixture into each pepper half. Cover and chill 1 hour.

Next, place flour, eggs, and bread crumbs in 3 separate shallow dishes. Dip chilled, stuffed pepper halves into flour, then eggs, then bread crumbs, coating thoroughly with each step.

Fill a large saucepan or pot with 2 inches of oil and heat over medium-high heat until 350 degrees. Carefully fry a few peppers at a time, 1 to 2 minutes, or until golden. Drain on paper towels and serve immediately.
