Jalapeno Poppers I

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

Monterrey Jack or cheddar cheese, sliced
vegetable oil
all-purpose flour, for dredging
1 large egg, beaten

Instructions:
Slit the peppers lengthwise and remove the seeds with a spoon handle. Stuff each pepper with cheese. Hold together with a toothpick, if necessary. Dip the peppers in flour, then egg, then dredge in flour again. Deep-fry for 5-7 minutes or until done.
