Jalapeno Pesto

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 large bunch cilantro leaves
1/3 cup pine nuts
2 fresh jalapeƱos, roughly chopped
3 garlic cloves, roughly chopped
1/2 cup good olive oil
1/2 cup freshly grated parmesan cheese
Salt & pepper to taste

Instructions:

Using a food processor or blender, add the cilantro, pine nuts, jalapeƱos and garlic cloves. Pulse until broken up and the mixture begins to combine.

With the machine running, add the olive oil slowly. Add the grated parmesean and pulse a few more times until the mixture resembles a paste.

Season with salt and pepper to your taste and pulse one last time.

You can also freeze pesto and it will keep almost indefinitely.
