Jalapeno Mexican Cornbread
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 pound ground beef, browned
1-1/2 cups grated cheese
1 cup self-rising cornmeal
1/2 cup self-rising flour
1 cup of buttermilk
2 eggs
1 small or medium onion, diced
1 can cream-styled corn
2 jalapeno chiles, stemmed, seeded and chopped
1 stick of butter, melted in pan
Instructions:
Mix all the ingredients together, and bake, preferably in a cast iron skillet, in a preheated 350F oven for 45-55 minutes,
