Jalapeno, Egg, and Sausage Burritos

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 eggs
1 jalapeno, chopped
1/4 pound sausage
grated cheddar cheese
2 large tortillas
your favorite salsa

Instructions:
In a medium frying pan cook the sausage with the jalapenos until the sausage begins turning brown. In a a bowl beat the eggs and pour into the pan with the sausage. Scramble until done.

Heat the tortillas and spread some of the egg mixture down the middle of each one and sprinkle with grated cheese. Melt very briefly in the microwave. Add your favorite salsa over the eggs. I recommend a homemade one such as Marias roasted de arbol or a salsa verde (tomatillo based) salsa. Roll the tortillas and enjoy! This is a real kick in the pants in the morning!!
