Jalapeno Dressing

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 bunch green onions, chopped
1/2 stalk celery with leaves, chopped
1/2 cup bacon drippings
1 cup water
8 cups crumbled cornbread
4 cups crumbled day-old bread
3 1/2 cups chicken broth
1 cup jalapeno pepper juice
1/2 tsp salt
1/8 tsp black pepper
1-3 jalapeno peppers, chopped

Instructions:

Saute onion and celery in bacon drippings. Add water and cook, covered, for about 7 minutes or until tender. Combine vegetables and liquid, breads, broth, and jalapeno juice. Season with salt and pepper. Add jalapeno peppers to taste. Add water to bread mixture as needed to achieve a very moist consistency. Spoon dressing into cavity of 20-pound turkey, placing extra dressing in greased casserole. Bake casserole at 350° for 30 minutes. Makes approximately 12 cups.
