Jalapeno-Cilantro Mustard

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 bunch cilantro, blanched and stems removed
1 tsp. dry mustard mixed with 1 tsp cold water
3/4 cup Dijon mustard
1 fresh jalapeno chile, stemmed, seeded and chopped
2 cloves garlic

Instructions:
Blanch the cilantro for 15 seconds in some boiling water, then place it in a bowl of ice water for another 15 seconds. Pat dry. (This helps it keep its color when mixed in the mustard.)

Place all the ingredients in a food processor and pulse until very smooth. Store the mustard in tightly covered glass jar and refrigerate.

Makes approximately 3/4 cup.
