Indian-Style Red Velvet Okra and Tomatillos
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!
Ingredients:
3 Tbsp vegetable oil
1/2 cup coarsely chopped onion
2 tsp ground turmeric
3/4 lb Red Velvet okra, sliced crosswise 1/2-inch thick
1 lb tomatillos- husked, washed, and quartered
2 large plum tomatoes, chopped
1 jalapeno, seeded and minced
1 Tbsp grated fresh ginger
1/4 cup water
Salt
1/3 cup coarsely chopped cilantro
Instructions:
Heat the oil in a medium skillet. Add the onion and turmeric and cook over moderate heat for 3 minutes. Add the okra and tomatillos and cook over moderately high heat, stirring, until browned and beginning to soften, about 5 minutes. Stir in the tomatoes, jalapeƱo, ginger and water, season with salt and simmer over low heat until the okra is tender and most of the liquid has evaporated. Add the cilantro and serve.
Serves 6.
