Indian Spiced Sweet Potato Patties
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
3 medium or 4-5 small sweet potatoes
1 medium potato, boiled
1 inch ginger, crushed
2 jalapenos, chopped finely
1 tsp ground cumin
1 tsp ground coriander
2-3 tbsp cornstarch
salt to taste
oil for shallow frying
Instructions:
Wash the sweet potatoes and bake it in the oven for 350 degrees for 50 minutes to 1 hour until cooked. In the meantime, boil a potato either on the stove-top or in a microwave.
Peel off the skin of the sweet potatoes and the potato, mash it and mix all the ingredients except the oil. Take some of the mix and flatten it between your hands, into round shaped patties. Heat oil in a skillet over medium heat. Shallow fry until nicely browned and caramelized on both sides. Serve hot with some ketchup.
