Hot Pork Chops
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
2 Tbsp. butter
2-3 cloves garlic
1 tsp. salt
1/4 cup prepared mustard
1-2 serrano chiles, minced
2 Tbsp. cider vinegar
2 Tbsp. packed light brown sugar
2 Tbsp. Worcestershire sauce
6 pork chops, 1-1/2″ thick
3/4 cup ketchup
1/2 cup chili sauce
1/3 cup water
Instructions:
In a small bowl, combine the butter, onion, garlic, salt, mustard, serrano chiles, vinegar, brown sugar and worcestershire to make a paste. Spread the paste over the pork chops and place in a large baking dish.
Preheat the broiler.
Broil the pork chops close to the heat for about 5 minutes. Remove the chops from the oven.
In a small bowl combine the ketchup, chili sauce and water, blending well. Pour the sauce over the chops, cover and bake at 350F for 1 hour or until the meat is tender. Serve over linguine. You can use the slow cooker for this one too.
