Hot Pepper Jelly

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1-1/8 cups red or green peppers , chopped
3/8 cups jalapeno peppers, chopped
4 cups sugar
1-1/4 cups vinegar
6 oz. liquid pectin

Instructions:
In a blender combine the peppers and 1/4 cup vinegar. Blend until pureed. In a medium saucepan combine the pepper mixture, sugar and 1 cup of vinegar. Bring to a good boil and remove from the heat.

Add 6oz. of pectin and boil for another minute. Remove the mixture and add a little red or green food coloring. ( Food coloring makes the color brighter.) Pour the liquid into the jars and fill the top with paraffin.
