Hot Chicken Artichoke Dip
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 cups finely chopped cooked chicken
1 (14 oz) can artichoke hearts, drained and chopped fine
1 cup mayonnaise (not fat-free)
1 cup grated parmesean cheese
1-3 garlic cloves, minced
1-2 jalapeno peppers, minced
Instructions:
Mix all ingredients together in baking dish and cook at 350°F until bubbles come up around the edges and it is heated throughout.
