Homemade Salsa

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 can (14 oz) Fire Roasted Tomatoes
1 cup fresh cherry tomatoes, sliced in half
1/2 cup white onion, chopped
2 cloves garlic, chopped
1 whole jalapeno, chopped
2 chipotle peppers in adobo, plus 1 tsp of the adobo sauce
1 tsp salt
1 tsp pepper
1/2 cup cilantro
1 lime, juiced

Instructions:

Combine all ingredients in the food processor or blender.

Pulse until everything is evenly blended..

Taste and adjust salt and pepper if needed. (Add more chipotle peppers if you like it extra spicy)

Remove from food processor or blender and refrigerate.
