Heirloom Tomato Salsa Cruda

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 pound mixed heirloom tomatoes
½ small red onion
1 cob fresh corn
½ jalapeño pepper
½ cup fresh chopped cilantro
1 lime (3 tablespoons fresh lime juice)
A few pinches kosher salt

Instructions:

Makes: 8 servings

Wash and finely chop the tomatoes. Finely dice the ½ cup red onion. Cut the corn from the cob. Cut the jalapeño pepper in half and remove and discard the ribs and seeds, taking care to wash your hands when finished. Finely dice one half (for a medium salsa); reserve the other half for future use. Chop enough for ½ cup cilantro. Mix all ingredients together in a bowl and add the juice of one lime and a few pinches kosher salt.
