Guacamole Eggs

3 avocados
2 Tbsp. lime juice
1/2 tsp. worcestershire sauce
1 Tbsp. Bailey Farms Red Habanero hot sauce
1/2 tsp. salt or to taste
1 large clove garlic, peeled and minced
2 scallions, white part only, chopped fine (chop and reserve the green part for garnish)
1 Tbsp. chopped cilantro
1 roma tomato, chopped fine
1 dozen hard cooked eggs, cut in half (yolks discarded)


In a small bowl using a fork, mash the avocado flesh completely smooth. Add the lime juice, worcestershire sauce, hot sauce, garlic and salt to taste to the avocado mixture and stir well. Add the chopped scallions, cilantro and chopped roma tomato and stir again. Mix well, taste and add more lime juice if desired.

Fill each egg white half with about a tablespoon of the guacamole and top with the sliced scallion greens.
