Grilled Guacamole Dogs

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

4 Avocados from Mexico
1 small red onion, sliced into 1/2-inch slices
1 jalapeno, finely diced
Juice of 2 limes
1/4 teaspoon garlic salt
A few dashes of hot sauce (use more for more heat)
8 hot dogs
8 hot dog buns
1 Roma tomato, sliced and cut into half circles

Instructions:

Preheat an outdoor grill to low heat.

Cut the avocados in half around the pit. Discard the pit. Put the avocados flesh side down on the grill and cook until slightly browned and caramelized. Allow to cool.

Put the onions on the grill while the avocados are cooking. Grill until the onions are softened slightly and charred.

Remove the skins from the grilled avocados and dice. Place in a large bowl and roughly smash the avocado. Take the grilled onion and dice. Add to the avocados along with the jalapeno, lime juice, garlic salt and hot sauce. Grill the hot dogs until heated through.

To assemble, place a hot dog on each bun. Put a layer of Roma tomatoes on the bun, and spread some of the grilled guacamole on top.
