Green Olive Salsa Verde
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 pound tomatillos, husks removed
1-2 jalapeno peppers, sliced in half and seeded
1/2 cup green olives
1 small onion, quartered
2 cloves garlic
1 lime, juice and zest
1 tablespoon olive oil
1/2 cup cilantro
salt to taste
2-3 teaspoon oil
Instructions:
Place the tomatillos and jalapenos on a baking sheet and broil in the oven until they blackened all over. Place the jalapenos in a small seeled container such as a ziplock bag, let cool for 20 minutes and pinch the skins from them. Place everything into a food processor and puree.
