Green Chile Sambal

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 lb green chile peppers, halved and seeded
2 tsp salt

Instructions:

Bring a large pot of water to a roiling boil. Add the chiles and boil for about 5 minutes. Drain, discarding all of the water. Transfer the chiles to a food processor or blender. Process until you get a thick but slightly chunky sauce. Add the salt and briefly pulse to mix in. Store in a glass jar in the refrigerator for up to 3 weeks, or spoon into an ice cube tray and store in a freezer bag.
