Green Chicken Chili

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

Ingredients:

4 chicken breasts trimmed of all fat
2 cans white kidney (canellini) beans
1 onion, chopped
1 tablespoon canola oil
1 jar Sazon brand Recaito (cilantro based sauce)
1 jar salsa verde (tomatillo salsa) (make your own)
1 tablespoon cumin
1 teaspoon ground coriander
1 diced jalapeno (more or less to taste)
salt and pepper
Sour cream, cilantro, queso, red onions, avocado, lime or whatever you like on chile to garnish

Instructions:

Place the chicken breasts in a pan and add enough water to cover. Bring to a boil and simmer, covered for about 20 minutes or until cooked through. Remove the chicken from the pan and reserve 2 cups of the liquid. Shred the chicken with two forks and set aside. Saute the onion in oil until soft and add the recaito, cook for several minutes. Add the reserved broth, shredded chicken, salsa verde, cumin, coriander, and jalapeno and cook for five minutes. Add the beans last and cook until heated through. Add salt and pepper to taste and serve with your favorite garnish and either cornbread or tortilla chips if you like. A great alternative to traditional chile if you’re looking to change it up a bit.
