Green Beans Ginger Lemon Curry
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
2 cups green beans, cut into thin slices
1 Tbsp ginger, grated
3 Tbsp vegetable oil
1/4 tsp mustard seeds
1 tsp cumin seeds, ground
1/4 tsp turmeric
2 green chiles, sliced in half, or to taste
1/4 tsp salt to taste
1 tsp lemon juice
1/4 cup water (optional-see note)
2 Tbsp coriander leaves, chopped
Instructions:
Heat oil add mustard seeds when it begins to pop add ginger, beans, chile and spices.
Add the lemon juice and water, cook the beans in low heat covered for about 10 minutes till it is tender.
Finally add the coriander leaves and remove from heat. If there is water, increase heat and let the water evaporate.
Note:Can add vegetable or chicken soup 1/2 cube or 1/4 cup stock water instead of water or can omit water and cook in its own steam.
