Gkoong Pad Sadtaw (Southern Style Shrimp with Favas)
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
10 cloves garlic, chopped
2 medium serrano peppers, chopped
6 medium Thai chiles, chopped
2 tsp. shrimp paste
2 Tbsp. peanut oil
1 cup fava beans
1 pound medium shrimp
juice of 1 lime
2 tsp. palm sugar
2 Tbsp. fish sauce
2 medium bay leaves
1 medium red jalapeno, chopped
Instructions:
Puree the garlic, serranos, Thai chiles and shrimp paste in a blender. Scrape the paste out of the blender and saute in oil for 1 minute. Add the fava beans and saute another minute.
Add the shrimp and saute until they turn pink. Add the lime juice, sugar, fish sauce, bay leaves and chopped jalapeno. Saute for 1 minute, then remove the bay leaves and discard. Serve over hot jasmine rice.
