Frijoles Rancheros
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 lb dried pinto beans (4 cans of beans may be substituted)
1 jalapeno, chopped
1 onion
2 tomatoes
2 cloves garlic, chopped
1/2 tsp cinnamon
2 whole cloves
Juice of 1 lemon
2 Tbsp olive oil
Salt to taste
Instructions:
Cook beans in water for 4 hours over low heat if using dried beans. Add jalapeno, onion, tomatoes, and garlic. Add cinnamon and cloves, lemon juice and olive oil. Cook 20 minutes. Add salt to taste. Serve warm with tortillas.
Serves 4-6.
