Fresh Heirloom Tomato Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
3 ripe heirloom tomatoes, diced
1 jalapeno, seeded and diced
1/2 cup of chopped cilantro
1/4 red onion, minced small
2 cloves garlic, minced
small a pinch of salt, or more to taste
juice from 1 lime
Instructions:
Makes 2 cup
Prepare all the ingredients and combine in a bowl. Let sit for 1/2 hour or so for all the flavors to meld together.
