Flank Steak Citrus Salad

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients:
1/2 fresh lime
12 oz uncooked lean flank steak
1/2 tsp chili powder
2 large seedless clementines
1/4 cup minced cilantro
1 jalapeno pepper, cored, seeded, and minced
2 Tbsp minced scallion
1/4 cup unsweetened orange juice
1 Tbsp balsamic vinegar
1 tsp canola oil
1/4 tsp table salt
1/8 tsp black pepper
2 cups cooked bulgur, at room temperature

Directions:

Squeeze lime on the steak. Rub in chili powder, and broil, 4 inches from heat, until medium-rare, 4-5 minutes per side. Let teak rest a few minutes; thinly slice against the grain.

Meanwhile, separate clementines into segments and roughly chop; place in medium bowl, toss with cilantro, jalapeno, and scallion.

In a cup, stir juice, vinegar, oil, salt, and pepper; set aside.

Add steak to clementine mix, pour juice mixture over. Toss well and serve over bulgar.
