Fish with Mango-Tomatillo Relish

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

1 mango peeled and diced
1-2 tomatillos husked, washed and diced
1/2 red pepper seeded and chopped
2 Tbsp. cilantro minced
2 Tbsp. lime juice
2/3 pound swordfish
salt and pepper to taste

Instructions:

Preheat the oven to 450F. Combine the mango, tomatillos, red pepper, cilantro and lime juice. Set aside.

Place the fish on a broiling pan and sprinkle with salt and pepper. Bake the fish for 12 minutes per inch of thickness and serve with the relish on the side.
