Fire Roasted Bacon-Wrapped Jalapenos
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
8 oz. cream cheese
2 tsp. roasted red pepper
1 pack bacon
fresh lime
salt and pepper to taste
12 jalapeno chiles, cut in half and cleaned out
Instructions:
Mix all the cheese, garlic, roasted red pepper, salt and pepper until smooth. Fill each pepper half with filling then take a piece of bacon and wrap it all the way around the jalapeno. Then put the chiles on a stick and grill them until they are crispy. You can also deep fry these, but grilling gives them that undeniably smoky flavor.
