Fiesta Chicken
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 stick butter, divided
1 3/4 cups finely crushed Cheddar cheese crackers
2 Tbsp taco seasoning
8 chicken breasts, boned, skinned and flattened
5 green onions, tops too, chopped
1/4 cup chopped jalapeno peppers (stemmed and seeded first)
2 cups heavy cream
1 tsp instant chicken bouillon
2 cups grated Monterey Jack cheese
Instructions:
Melt butter in a 9×13-inch baking dish and set aside. Combine cracker crumbs and taco mix. Dredge chicken in this mixture-pat this on so you get plenty of crumbs to stick on chicken. Place chicken in baking dish with butter. Remove a couple of tablespoons of melted butter from dish and place in a medium saucepan. Add chopped onions and saute. Then add jalapenos, heavy cream, instant chicken bouillon and the Monterey Jack cheese. Mix well. Pour this mixture over chicken breasts. Bake uncovered at 350° for 50-55 minutes.
