Feta-Stuffed Mini Peppers

4 oz. spinach
8 oz. feta cheese, crumbled
28 mini sweet peppers


1. Preheat oven to 375 degrees F. Thoroughly wash spinach and remove stems. Cut leaves into thin strips. In a large bowl, combine the spinach and feta cheese. Cut a thin slice from the top or side of each pepper. Use the handle of a spoon to scoop seeds from peppers.

2. Stuff sweet peppers with feta mixture, mounding feta mixture slightly. Place stuffed mini peppers in a 3-quart rectangular baking dish, stuffed sides up.

3.Bake, uncovered, for 18 to 20 minutes or until peppers are slightly soft.
