Egg Salad with Serrano Peppers
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
4 hard boiled eggs
2 whole wheat pitas, warmed
3 Tbsp crumbled feta cheese
4 tsp horseradish sauce
2 tsp spicy brown mustard
2 slices white cheddar cheese
6 Serrano peppers, sliced
Instructions:
In a mixing bowl, combine hard boiled eggs with horseradish sauce, mustard and feta cheese. Mash well.
Set 1 piece of cheddar over each pita. Divide egg salad mixture over pitas. Top with Serrano slices. Serve!
