Easy Lime Fiesta Butter Beans
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 16oz. can butter beans, drained/rinsed
1 16oz. can diced fire-roasted tomatoes + chiles
1 lime, squeezed
1 slice lime (set on top before baking – remove before serving beans)
1 Tbsp jalapeno, diced (optional for heat)
1/2 cup onion, diced
2-3 Tbsp extra virgin olive oil
1/2 tsp garlic powder or 1 clove garlic, chopped
1/2 cup cilantro, chopped
salt + pepper to taste
garnish: fresh cilantro + black pepper
Instructions:
Serves 4.
Preheat oven to 400 degrees.
Combine all ingredients in large bowl. Fold well. Pour mixture into oven-safe baking dish. Bake until the edges begin to bubble – usually around 15-20 minutes. Serve hot from the oven. Top with fresh cilantro. You can also serve in individual mini baking dishes.
