Dee’s Crawfish Etoufee

Ingredients:

3 sticks butter
1 1/2 cups finely chopped onion
1 cup finely chopped celery
1 cup finely chopped green onion
1 1/2 tsp garlic powder
6 Tbsp flour
1 (14-oz) can stewed tomatoes
3 cups fish stock or chicken broth
3 tsp salt
1 1/2 tsp black pepper
1/4 tsp cayenne
10 drops Bailey Farms Hot Sauce
2 Tbsp Worcestershire sauce
2 lbs. crawfish tails, drained

Instructions:

In a 5-quart pot, add butter and saute the onion, celery, green onion, with garlic powder until vegetables are tender. Add flour, stirring constantly, for 3 minutes. Add tomatoes (mashed a little) plus juice from can. Continue cooking and stirring 5 minutes. Mixture will be golden brown. Blend in stock and seasonings and simmer, stirring occasionally for 10 minutes. Add crawfish and cook slowly for 20 minutes. Adjust seasoning. Serve over rice.

Note: This is good made ahead-flavors have a chance to blend. You can use chicken broth but fish stock is better.
