Cranberry Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
2 cups frozen cranberries, thawed
2 Tbsp fresh lime juice
6 Tbsp honey
1 1/2 Tbsp tequila
1 1/2 Tbsp Tripe Sec or other orange liqueur
4 fresh jalapeno peppers, seeded and minced
1/4 cup chopped cilantro leaves
Instructions:
Place the cranberries in a blender. Pulse until smooth. Scrape into a bowl. Stir the lime juice, honey, tequila, Triple Sec, jalapeno peppers, and cilantro into the cranberries. Cover and refrigerate overnight.
Serve 12.
