Cranberry Pepper Jelly
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 cup chopped jalapeno peppers
1 quart cranapple juice cocktail
7 cups sugar
1 1/4 cups vinegar
7 oz. Certo (liquid)
Red food coloring
Instructions:
In a blender container, process peppers and cranapple juice until peppers are finely chopped. Strain into large kettle. Stir in sugar, vinegar, Certo, and food coloring to tint as desired. Bring to a rolling boil, then boil 3-5 minutes. Pour into sterilized jelly glasses and seal with paraffin. When cool, cover with lids.
Makes 8 half-pints.
