Cranberry-Orange Salsa
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 1/2 cups cranberries
1 navel orange, peeled and diced
4 oz seeded and diced green chile pepper (like jalapeƱo or sera no)
3 Tbsp sugar
1 Tbsp scallions, sliced
1 Tbsp fresh cilantro, snipped
1 Tbsp fresh lime juice
Instructions:
In a food processor, chop the cranberries and transfer them to a bowl. Stir in the oranges, chili pepper, sugar, scallions, cilantro, and lime juice.
Makes 2 cups.
