Crab Fried Rice

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

Fried rice:

2 Tbsp. oil
1 garlic clove, chopped
1 cup cooked crabmeat
2 beaten eggs
3 cups cooked rice
2 Tbsp. maggi seasoning
2 Tbsp. fish sauce, (nam pla)
2 Tbsp. sugar
1 chopped scallion

Sauce:

1/4 cup fish sauce (nam pla)
5 finely chopped Thai peppers

Garnish:

1 sliced tomato
1/2 cup sliced cucumbers
cilantro leaves
lemon slices

Instructions:

A delicious accompaniment for any dish. Vary the number of chile peppers in the sauce according to personal taste.

Heat a large skillet and add the oil. Stir-fry the garlic, crab and eggs together until the egg is cooked. Add the rice, Maggi seasoning, fish sauce and sugar. Continue to stir-fry until the mixture is hot. Add the green onion.

Mix together the sauce ingredients. Remove the rice to a serving dish and decorate with the garnish. Serve with the sauce on the side.
