Crab Ceviche
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
1 (8 oz.) package imitation crabmeat, flaked
2 large tomatoes, chopped
1 red onion, finely chopped
1/2 bunch cilantro, chopped
2 limes, juiced
3 serrano peppers, finely chopped
1 Tbsp. olive oil
salt and pepper to taste
Instructions:
Place the shredded imitation crab into a glass or porcelain bowl. Plastic or metal are not recommended. Stir the olive oil into the crabmeat until well coated, then stir in the cilantro, onion, tomato and serrano peppers. Squeeze the lime juice over everything, and mix well. Season with plenty of salt and pepper. Refrigerate for about 1 hour before serving.
