Corned Beef with Tomatoes and Jalapenos
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
1 pickled brisket (corned beef)
Pickling spices to taste
1 can diced tomatoes
1 whole jalapeno, sliced
1 small can vegetable or tomato juice
Wrap all ingredients in foil. Cook until fork tender.
I wrapped it in foil (to keep it from drying out due to the small quantity of liquids) adding pickling spices, a can of diced tomatoes and slicing up one jalapeno. After cooking it for a while, I added V-8 juice to keep it from drying out.
Alternately, cook all ingredients in a crock pot.
