Corn, Green Chiles, and Cheese

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 onion, chopped
1/4 cup diced jalapenos (seeded,stemmed, and deveined)
2 Tbsp butter
1 can whole kernel corn
1/2 lb grated Monterey Jack cheese
1/2 cup sour cream

Instructions:

Saute onion and chiles in 2 Tbsp butter or enough to cover the bottom of a skillet. Add corn. Fold cheese into mixture until it melts. Add salt and pepper to taste. Just before serving, mix in 1/2 cup sour cream. Serve immediately.
