Corn and Pepper Relish

1 cup frozen corn
5-6 mini sweet peppers, julienned
1 to 1 1/2 wedges of Laughing Cow cheese (flavor of your choice)
1 tablespoon olive oil


Heat 1 tablespoon olive oil in a skillet. Place peppers and corn into the skillet and saute for about 5 minutes. (If you prefer the peppers to be less crispy, saute for 1-2 minutes more.) Add Laughing Cow cheese wedge to the pan. It will melt fairly quickly. Stir continually to cover the veggies with the cheese.
