Coconut Fish Soup

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 1/2 quarts fish stock or bonito broth
1 1/2 cups coconut milk or 7 oz creamed coconut
1 lb fresh fish, cut into small cubes
3 jalapeƱo chiles, diced
1 Tbsp grated fresh ginger
2-4 Tbsp lime juice
5-6 basil leaves, chopped
Sea salt or fish sauce
Chopped cilantro for garnish

Instructions:

Combine stock or broth, coconut milk, fish, chiles, ginger, lime juice, and basil and simmer for 10 minutes. Season to taste and garnish with cilantro.
