Cilantro Lime Rice
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
3 cups cooked basmati rice, at room temp
2-3 Tbsp fresh squeezed lime juice
Salt to taste
1 tsp lime zest
1 Tbsp oil
1/4 tsp sugar
1 tsp chopped jalapeño or green chile
Instructions:
In a large pan, heat the oil on medium heat, add in the green chile and sauté for 30 seconds. Add in cilantro, rice, and salt. Mix well.
Cook for 2 minutes, add in lime zest, lime juice and stir to combine. Sprinkle in the sugar. Mix well and remove from heat. Serve.
