Cilantro Jalapeno Lime Rice
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 Tbs. butter
1 Tbs. olive oil
1/2 of a jalapeno, seeded and finely diced
1 clove garlic, finely minced
1 cup RiceSelect Jasmati Rice
2 cups water
1/2 tsp. salt (plus more to taste)
1/4 cup fresh cilantro, chopped
2 Tbs. lime juice
Instructions:
Heat butter and olive oil over medium heat in a medium saucepan. Once butter has melted, add jalapeno and garlic to the saucepan and sauté until jalapeno softens (1-2 minutes).
Add the rice to the saucepan and sauté the rice, stirring occasionally, for approximately 1 minute.
Add water and salt to the saucepan. Turn up the heat and bring the rice to a boil. Once the rice is boiling, cover the saucepan and turn the heat to medium-low. Simmer the rice, without stirring or uncovering, for 20 minutes, or until all liquid has been absorbed and rice is fluffy.
Remove cooked rice from the heat and add cilantro and lime. Fluff all ingredients together with a fork (do not stir a lot, because rice will not remain fluffy). Taste for salt. Serve immediately.
