Chunky Tomato-Fruit Gazpacho

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

2 cups finely diced cantaloupe
2 cups finely diced honeydew melon
2 cups finely diced tomatoes
1 mango, finely diced
2 salad cucumbers, finely diced
1 jalapeno pepper, seeded and finely chopped
1 cup finely diced peaches
2 cups fresh orange juice
1/2 cup finely chopped sweet onion
1/4 cup chopped fresh basil
3 Tbsp chopped fresh mint
3 Tbsp fresh lemon juice
1 tsp sugar
1/2 tsp salt
Garnish: fresh basil sprigs

Instructions:

Combine first 14 ingredients in a large bowl. Cover and chill 2 to 24 hours. Garnish, if desired.

Makes about 9 cups.
