Chorizo-Tomatillo Filling

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

1 pound hot chorizo sausage, casings removed
1 cup chopped onion
3 cloves garlic, peeled and minced
1 Tbsp. ground cumin
1 cup canned tomatillos
1-1/2 cups chevre (goat cheese)
1-1/2 Tbsp. lime juice

Instructions:

In a 10- to 12-inch frying pan over medium heat, crumble the chorizo and stir with the onion, garlic, and cumin until browned, about 8 minutes. Discard any excess fat.

In a food processor, whirl the sausage mixture, tomatillos, cheese, and lime juice until smooth. Or mince the meat mixture and tomatillos, put in a bowl, and stir in cheese and lime juice.

This filling is great for making enchiladas, tostados, tacos and chalupas.
