Chorizo con Papas

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1/2 lb chorizo Mexican sausage (or pork sausage)
6 Tbsp corn oil
1 large potato, diced
1 medium onion, diced
1 sweet pepper, diced
Fresh jalapeno, diced
2 tomatoes, chopped
6 eggs, well beaten
Flour tortillas
Picante sauce

Instructions:

Remove sausage from casing. Brown in skillet, crumbling with fork as it cooks. Remove from pan and drain. Heat oil in skillet. Add diced potato, onion, sweet pepper, jalapeno, and tomatoes and cook until tender. Add sausage and eggs. Cook until eggs are set. Serve on warm flour tortillas. Add picante sauce.

Variation: Add 1/2 cup chopped pimentos and 1/2 cup grated cheddar or Monetery Jack cheese.
