Chopped Salad with Salsa Verde Dressing

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

3 tomatillos, husked, quartered
1/3 cup (lightly packed) cilantro
5 Tbsp. fresh lime juice
1-1/2 tsp. chopped jalapeno chile
1 garlic clove, peeled
6 Tbsp. vegetable oil
1/2 cup finely chopped green onions
2-1/2 cup chopped romaine lettuce
2 cup chopped green cabbage
3/4 cup chopped, seeded tomatoes
3/4 cup chopped and peeled jicama
3/4 cup fresh corn kernels
1 avocado, pitted, peeled and diced
1/4 cup feta cheese, crumbled

Accompaniment: white corn tortilla chips (optional)

Instructions:

Puree the first 5 ingredients together in a blender and pour into a medium bowl. Whisk in the oil, then the green onions.

Season with salt and pepper and mix all the remaining ingredients in a bowl. Toss with enough dressing to coat. Serve with chips.

Yields 4 servings.
