Chimayo Corn Pudding
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 1/2 cups creamed corn
1 cup yellow cornmeal
1 cup (2 sticks) butter, melted
3/4 cup buttermilk
2 medium onions, chopped
2 eggs, beaten
1/2 tsp baking soda
2 cups grated sharp Cheddar cheese
1/4 cup diced jalapenos (seeded, stemmed, and deveined)
Instructions:
Preheat oven to 350°. Grease a 9-inch square baking pan. Combine first 7 ingredients and mix well. Turn half the batter into the greased pan. Cover evenly with half the cheese, all the jalapenos, then the remaining cheese. Top with remaining batter. Bake one hour. Let cool 15 minutes before serving.
