Chiles Rellenos con Carne
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
About 3/4 lb green chiles (such as jalapeno)
2/3 lb ground elk, deer, or moose
1/2 cup raw rice
1/2 (1.25 oz) package of taco seasoning
1 (8-oz) can tomato sauce
1 (6-oz) can vegetable juice
Dash paprika
1/2 cup picante sauce
Grated cheese
Instructions:
Split chiles and set aside. In a bowl, mix ground meat, rice, taco seasoning, and one-half can of tomato sauce. Stuff chiles with m eat mixture. Secure each with a toothpick.
Place stuffed chiles in a casserole dish. Top each with additional tomato sauce. Add vegetable juice to pan. Sprinkle peppers with paprika and picante sauce on top and around peppers.
Bake at 350° for 50-55 minutes, basting frequently with pan juices. Top each chile with grated cheese and return to oven briefly to barely melt cheese. Serve hot, removing toothpicks.
