Chile-Vanille Shrimp
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
Ingredients:
1 pound 26/30 shrimp, peeled and deveined, leaving on the tail sections
8 bamboo skewers soaked in water for 30 minutes
nonstick vegetable oil spray
1/2 tsp. lime zest
salt, to taste
1 cup papaya salsa (see recipe below)
1 Tbsp. vanilla extract
1 Tbsp. Bailey Farms Red Habanero hot sauce
Papaya salsa:
1 large ripe papaya, peeled, seeded and diced
3 jalapenos, stemmed, seeded and minced
1/4 cup minced red onion
1/4 cup chopped cilantro
2 Tbsp. lime juice
1/2 tsp. grated lime zest
Instructions:
Fire up the grill or turn the broiler on. Take the bamboo skewers and thread the shrimp onto them, then spray the shrimp with some of the oil spray and season with some salt and lime zest. Grill or broil the shrimp 2″- 3″ from the heat or flame, for about 2 minutes on each side.
While the shrimp skewers are cooking combine the salsa, vanilla, and the red habanero pepper sauce. Spread half of the salsa mixture over the skewers and grill them for another 2 minutes. Serve the shrimp with the remaining salsa.
